Posted @withregram • @bakers.for.bakers At a time when the world feels completely unhinged— from global climate change to war and famine on several continents— it is rare to find an achievable action one can take that will directly affect those in need. Bakers for Bakers was recently formed in response to this moment. We believe in the power of collaboration, strength in numbers, and the immeasurable value of community. And we have identified an achievable goal to launch this effort.

BREAD: FLOUR, WATER, SALT, TIME, AND HOPE says it all. Our first fundraiser in August benefits the amazing @bake.for.ukraine with the funds raised going specifically to moving and refurbishing two mobile wood-fired bakeries that are currently sitting on the border of Ukraine and Belarus.

Bake for Ukraine is an NGO that since the start of the war has worked to secure the local food supply by supporting local bakeries and farmers - mainly in the cities most affected by the war. They have raised money to enable local bakeries to give away free bread to people driven from their homes and livelihoods, supporting small bakeries in Kyiv, Bucha, Kherson, Odesa and Kharkiv. The targeting of Ukraine’s power grid has challenged this effort as rolling blackouts are a daily occurrence.

Last year, the small team of Bake for Ukraine discovered the existence of a few wood-fired mobile bakeries built by the Swiss army during the Cold War. Currently Bake for Ukraine has secured one mobile bakery (pictured here) thanks to the amazing fundraising efforts of @felicityspector based in the UK. This mobile bakery is in Mykolaiv where local volunteers are being trained by the team to bake bread for communities in Kherson region.

The week of August 19th - August 24th, bakeries across America will be baking Palyanytsya bread and other specialties to fund two more mobile wood-fired bakeries. Bakers….please join us. DM for more info! Stay tuned!

All of our wonderful shops, some received loaves yesterday, some this morning, (@hodmedods deliveries on Thursdays!) tagged so you know where to pick up from :) do hope you enjoy them as much as I enjoyed milling, mixing and baking them for you. I’ll also be with super Ollie and Tree, founders of beautiful delicious Bonitas in Stowmarket, this Sunday from about 10am - 1pm. Do come along and try some of our wholemeal local loaves, learn about why we LOVE the WHOLE GRAIN and all its goodness and deliciousness, and about the diverse cereal seeds we use in them. There’ll be some great @wakelyns @orgrescent booklets too to find out more about Wakelyns, where the YQ population wheat which goes into your bread was developed and grown between the trees in this abundant agroforestry system. 🌾🌳🍒

I returned home and to @wakelyns this week after a really wonderful, enriching time @elmoremountainbread. THANK YOU Blair, Andrew and Phineus for welcoming me so so warmly, kindly, and generously.

I was not feeling so well for part of my stay - @uk_grain_lab community (and our whole international community) a reminder to us all of our timeline and taking care of ourselves and NOT BURNING OUT! ♥️ But being in this beautiful beautiful place, working directly with farmers in Vermont, freshly stone milling their grain each week, using local, ecologically managed wood, delivering loaves personally and compassionately knowing all of their customers, was certainly part of my healing and enabling to feel myself again; it was the most nourishing tonic! A constant reminder of why we do what we do, how it is a part of us, why we all love it so much, how lucky we are to have found this work and each other, and have such a strong and vibrant international grain community too. Friendships ♥️♥️♥️

Thank you, Blair, for your energy, patience, sharing, teaching and just non-stop determination and strength in what you do. You filled me with hope, new ideas, inspiration and positivity and I couldn’t wait to get back to work!!! In a recent @zoe podcast about the Blue Zones, as well as wholegrains and beans, obvs! Magical May. It zoomed past. Pausing for a moment to reflect now and an overarching feeling, as always, is of so much gratitude. Most of all, gratitude to be part of something that is bigger than myself, than ourselves. And gratitude to be part of a community that is so kind and gentle, which acknowledges that we are not perfect and the work that we need to do, and whilst doing so, treads gently, and embraces the beauty of the process and our collective learning and growing that we are all doing whilst we create and alternative grain system.

Thank you Kim @smallfoodbakery and every being who makes @uk_grain_lab what it is, we are all Grain Lab! And super stars @charlotte.bick, @leveneruth, @rosybenson, @gothelneyfarmer, @scotseedsov, @thegaiafoundation, Joff @beameditions, @leilas_shop, @stromabakes, @_sarahlemanski_, @josiah.meldrum, @dough_club, @ilpanificiobrutto, and so many more behind the scenes who made it all happen.

Thank you everyone who came to visit our dreaming and intentions space. It was a bit of an experiment but I felt really humbled and grateful to be part of holding that space. I learnt a lot, most of all I think that as well as the galvanising, important conversations and action, finding peace and moments of reflection in order to move forward with awareness are so vital too.

Part of the transition to a localised, more connected, kinder and more loving (food) system must involve more access to foods, crafts and everything created with those values. This is an incredibly complex subject, but we hope that in a small way, having access to them here could help make a little positive ripple and bring a bit more joy and nourishment in our world, which we must summon our attention to now more than ever, in every moment.

The BIGGEST thanks always to David and Amanda @amanda_at_wakelyns_ for all their LOADS OF help and support with this, and super George! It’s been a big team effort :) and we all really enjoyed building our little space together, it’s always changing too, we’re enjoying that evolving process! Produce is slowly and surely coming, but we are still very grateful for our preserves that are lasting us through, and bringing sensuous vibrancy in, the hungry gap.

Lakshmi @lakshmi_yuvaa puts dandelion petals all over our prune brownies topped with @fenfarmdairy yoghurt and cultured cream and our candied squash

Amanda and her magic polytunnel provide us with the most sumptuous giant chard for lunch for @thegreenparty councillors

We make some new stencils with PI’Y to tell a story of and honour the Kayapó tribe, their language, identity, culture, and Brazil nuts; and with OFP SPRING POP for @edwarddickin’s wonderful spring Oak Farm population wheat we’re now combining with the @wakelyns YQ - read more about it in our letter 💌

Whilst seeds are swapped and connections are made, we’ll be there with a little stall with lots of seed deliciousness!

Something new this week 💚

We’ve started a lovely muesli porridge loaf with our friends @hodmedods using their organic muesli mix of rye, malted wheat, jumbo and rolled oat and barley flakes. We soak it all over night and add it to our wholemeal dough. This creates really soft squidgy delicious loaves, full of diversity from the population wheats used in them, to the extra muesli grains. The result? Lots of flavour, malt-chocolate-hay, and goodness from the soil to you. Find it on the Hodmedod’s website, link in our bio. Order by Sunday evening for Thursday delivery, yum yum.

@wakelyns agroforestry abundance loaf-cakes and @hodmedods @turnersofbytham naked oat deliciousness with @realveg_csa parsley, chervil, chard, cavolo nero and wild garlic from the woods, for 40 wonderful stewards of the land yesterday @wakelyns learning from always smiling and generous @charles_dowding.

Making these loaf-cakes is always such a joy, and so connective. Using all the fruits and crops from the agroforestry in many different forms. Quince, apple and pear purée as a base, mixed with prunes (our own dried plums), dried pear and apple, candied quince and squash, and then lots of other delights - we make a lentil, YQ, buckwheat, oat and quinoa flour-flake mix to go in too, as well as Brazil nuts from the Kayapòn tribe in the Amazon rainforest, @hodmedods linseed, @j.stringerandsons rapeseed oil and lots of love. Our recipe is always a guide, if we’re low on anything we’ll use up other things we do have, and use our creativity and senses. This time it was mostly a quince purée base (apple and pear all used now) and they were so good! @foodandforest walnut butter and a spoonful of our medlar jelly to give it a colourful zingy finish!

These freeze well so if we’re making some, we’ll@make a big batch and freeze the rest for efficiency. The efficiency of the abundant agroforestry around us inspires us always in so many ways! If you’re visiting Wakelyns soon, this will probably be on the menu! :)

The delicious naked oats, a great local rice alternative, we’re dressed with our apple molasses and cider vinegar, as well as more oil for Mike Stringer and his family. Served with @lakshmi_yuvaa’s great Dal Makhani from her recipe in @joe_woodhouse’s super book, More Daily Veg, highly recommend, so much goodness in it! Then lots of @wakelyns roast squash, @fenfarmdairy yoghurt, pickles and chutneys.

A happy, calm and abundant day of creating with What’s around us and nourishing more Wakelyns visitors, always such a pleasure!!! Thank you so much David and Amanda, @realveg_csa, @charles_dowding and everyone who came.

@wakelyns candied squash jewel tasting, from bottom clockwise, Red Kuri, Black Futsu and Butternut, all grown by Jannine @scankyhippy and her wonderful family. All so different in texture and flavour, all so wonderful, fun and playful, reminiscent of candied chestnut, mango… and just beautiful squash!!!

It’s a quieter time of the year here in terms of gathering and harvesting produce, but we’re still grateful to be kept busy with what’s been stored from the year before to process and preserve for the year ahead. We’ve also been making squash, quince and apple chutney, pickles, and plum jam with plums for the freezer, that we just couldn’t fit in last year during the harvest as well, and the other jamming and pruning and juicing…!

We’re grateful for this quieter part of the seasons’ cycle, enabling us to stock up on these preserves, like our flavour foundation, that will help us so much in the year ahead… adding candied squash to cakes and tarts, jams for everyone’s breakfasts, chutney and pickles with dal and more.

It’s hard to put into words what cooking with what’s around us means to us and does to us as humans, but feelings of gratitude and connection are very much here, humbling, grounding, slowing down, being very thrifty and creative and making do with what we have, appreciating, gathering produce and people together. I’ll stop there for today. One day I’d like to write a book about it all, one day… :)

A little magic chocolate factory making bean to bar chocolate and other delights, with beans sourced traceable and kindly. If you’re nearby and haven’t been yet, this is a lovely chance to visit, with tasters on us :) but lots of other delights to buy if you’d like!

Heron @heronholmes1, Dmitry and I cleaning the beautiful YQ and Nick’s purple wheat a week or so ago, and having fun!

Our cleaning and weighing, and then milling, baking, feeling and tasting, is part of the @wakelyns YQ Coming Home project.

In winter ‘21 we drilled five alleys of diversity - the original Wakelyns YQ, some YQ from the first farm it travelled to, Mark and Liz @green_acresfarm, then from John, Steph and Guy @turnersofbytham and Mike and his family @j.stringerandsons. For the final alley, we mixed them all up for a YQ megamix.

With its diversity enabling resilience, but also adaptation to the land and climate it grows in, we hope to research and explore into what happens when these seeds leave the landscape they were created in and adapt to. Whilst growing and before harvest, they certainly all looked very beautifully differentiate the alleys between the willow. But what about now when we weigh them after harvest, how did they grow, how will they mill, mix, bake and eat?

We’re not sure right now what the outcome of this research will be, that’s the learning in the doing, but we know that doing it feels of utmost importance at a time when we need these diverse and resilient seeds more than ever for the longevity of all living beings on/and this Earth.

Here’s a super diagram to show you exactly all the goodness you are getting when you buy our loaves (compared to a loaf made with white, sifted, roller-milled commodity flour - just the stuff in yellow :( ). The goodness goes beyond the loaf to the soils and communities who are being nourished through the growing of this wonderful diverse cereal seed used each day in our bead, the YQ.

Oh! A big pile of prune, barley and oat squares, and bread!

THANKS to lots of you lovely people who have ordered our pruneness and agroforestry abundance loaves, next week will be our last week of selling them online with @hodmedods - we’re now running low on some of the ingredients - apple, pear and quince purées and candied quince, dried cherries and prunes - so we’ll be waiting happily and patiently until next year’s harvest @wakelyns for more. We hope to work on some other deliciousness in the new year with other ingredients we are very grateful to have access to.

If you’d still like to try these, you can order them with @hodmedods until early Monday morning/ until they sell out - limited numbers of them available. And all of our bread is available too, link in our bio to the Hoddy bakery. We’re then having a rest and will be back on 22nd January.
