Produce is slowly and surely coming, but we are still very grateful for our preserves that are lasting us through, and bringing sensuous vibrancy in, the hungry gap.

Lakshmi @lakshmi_yuvaa puts dandelion petals all over our prune brownies topped with @fenfarmdairy yoghurt and cultured cream and our candied squash

Amanda and her magic polytunnel provide us with the most sumptuous giant chard for lunch for @thegreenparty councillors

We make some new stencils with PI’Y to tell a story of and honour the Kayapó tribe, their language, identity, culture, and Brazil nuts; and with OFP SPRING POP for @edwarddickin’s wonderful spring Oak Farm population wheat we’re now combining with the @wakelyns YQ - read more about it in our letter 💌

We feel really happy and privileged to be @barleybirdcic seed swap this Saturday from 10am - 1pm @hodmedods Bean Store.

Whilst seeds are swapped and connections are made, we’ll be there with a little stall with lots of seed deliciousness!

🌞 Seeded loaves with all of @hodmedods wonderful seeds, including coriander, hemp and camelina
🌈 Hodmedod’s 4 grain muesli loaf
🌾 Deep quiches with leeks, many cheeses and Clacton pumpkin seed wholemeal YQ pastry

@wakelyns agroforestry abundance loaf-cakes and @hodmedods @turnersofbytham naked oat deliciousness with @realveg_csa parsley, chervil, chard, cavolo nero and wild garlic from the woods, for 40 wonderful stewards of the land yesterday @wakelyns learning from always smiling and generous @charles_dowding.

Making these loaf-cakes is always such a joy, and so connective. Using all the fruits and crops from the agroforestry in many different forms. Quince, apple and pear purée as a base, mixed with prunes (our own dried plums), dried pear and apple, candied quince and squash, and then lots of other delights - we make a lentil, YQ, buckwheat, oat and quinoa flour-flake mix to go in too, as well as Brazil nuts from the Kayapòn tribe in the Amazon rainforest, @hodmedods linseed, @j.stringerandsons rapeseed oil and lots of love. Our recipe is always a guide, if we’re low on anything we’ll use up other things we do have, and use our creativity and senses. This time it was mostly a quince purée base (apple and pear all used now) and they were so good! @foodandforest walnut butter and a spoonful of our medlar jelly to give it a colourful zingy finish!

These freeze well so if we’re making some, we’ll@make a big batch and freeze the rest for efficiency. The efficiency of the abundant agroforestry around us inspires us always in so many ways! If you’re visiting Wakelyns soon, this will probably be on the menu! :)

The delicious naked oats, a great local rice alternative, we’re dressed with our apple molasses and cider vinegar, as well as more oil for Mike Stringer and his family. Served with @lakshmi_yuvaa’s great Dal Makhani from her recipe in @joe_woodhouse’s super book, More Daily Veg, highly recommend, so much goodness in it! Then lots of @wakelyns roast squash, @fenfarmdairy yoghurt, pickles and chutneys.

A happy, calm and abundant day of creating with What’s around us and nourishing more Wakelyns visitors, always such a pleasure!!! Thank you so much David and Amanda, @realveg_csa, @charles_dowding and everyone who came.

@wakelyns candied squash jewel tasting, from bottom clockwise, Red Kuri, Black Futsu and Butternut, all grown by Jannine @scankyhippy and her wonderful family. All so different in texture and flavour, all so wonderful, fun and playful, reminiscent of candied chestnut, mango… and just beautiful squash!!!

It’s a quieter time of the year here in terms of gathering and harvesting produce, but we’re still grateful to be kept busy with what’s been stored from the year before to process and preserve for the year ahead. We’ve also been making squash, quince and apple chutney, pickles, and plum jam with plums for the freezer, that we just couldn’t fit in last year during the harvest as well, and the other jamming and pruning and juicing…!

We’re grateful for this quieter part of the seasons’ cycle, enabling us to stock up on these preserves, like our flavour foundation, that will help us so much in the year ahead… adding candied squash to cakes and tarts, jams for everyone’s breakfasts, chutney and pickles with dal and more.

It’s hard to put into words what cooking with what’s around us means to us and does to us as humans, but feelings of gratitude and connection are very much here, humbling, grounding, slowing down, being very thrifty and creative and making do with what we have, appreciating, gathering produce and people together. I’ll stop there for today. One day I’d like to write a book about it all, one day… :)

We’re celebrating @realbreadcampaign Real Bread Week this week with our friends Deanna, Jonathan and Emil @tosierchocolate with a tasting for all your senses from 11am - 1pm. Please come, we’d love to see you!

Tosier hasn’t been open in Middleton for very long but what they have created is wonderful. A little magic chocolate factory making bean to bar chocolate and other delights, with beans sourced traceable and kindly. If you’re nearby and haven’t been yet, this is a lovely chance to visit, with tasters on us :) but lots of other delights to buy if you’d like!

Keeping with the grain :) after us @adnams will be doing a whisky tasting, with more lovely lively Tosier chocolate.

Heron @heronholmes1, Dmitry and I cleaning the beautiful YQ and Nick’s purple wheat a week or so ago, and having fun!

Our cleaning and weighing, and then milling, baking, feeling and tasting, is part of the @wakelyns YQ Coming Home project.

In winter ‘21 we drilled five alleys of diversity - the original Wakelyns YQ, some YQ from the first farm it travelled to, Mark and Liz @green_acresfarm, then from John, Steph and Guy @turnersofbytham and Mike and his family @j.stringerandsons. For the final alley, we mixed them all up for a YQ megamix.

With its diversity enabling resilience, but also adaptation to the land and climate it grows in, we hope to research and explore into what happens when these seeds leave the landscape they were created in and adapt to. Whilst growing and before harvest, they certainly all looked very beautifully differentiate the alleys between the willow. But what about now when we weigh them after harvest, how did they grow, how will they mill, mix, bake and eat?

We’re not sure right now what the outcome of this research will be, that’s the learning in the doing, but we know that doing it feels of utmost importance at a time when we need these diverse and resilient seeds more than ever for the longevity of all living beings on/and this Earth.

Here’s a super diagram to show you exactly all the goodness you are getting when you buy our loaves (compared to a loaf made with white, sifted, roller-milled commodity flour - just the stuff in yellow :( ). The goodness goes beyond the loaf to the soils and communities who are being nourished through the growing of this wonderful diverse cereal seed used each day in our bead, the YQ.

Oh! A big pile of prune, barley and oat squares, and bread!

THANKS to lots of you lovely people who have ordered our pruneness and agroforestry abundance loaves, next week will be our last week of selling them online with @hodmedods - we’re now running low on some of the ingredients - apple, pear and quince purées and candied quince, dried cherries and prunes - so we’ll be waiting happily and patiently until next year’s harvest @wakelyns for more. We hope to work on some other deliciousness in the new year with other ingredients we are very grateful to have access to.

If you’d still like to try these, you can order them with @hodmedods until early Monday morning/ until they sell out - limited numbers of them available. And all of our bread is available too, link in our bio to the Hoddy bakery. We’re then having a rest and will be back on 22nd January.

Thank you so so much to everyone who has started to order our new agroforestry loaf; prune, barley and oat squares and Kayapó PI’Y Brazil nut loaves with @hodmedods. We’re super grateful for your orders and have been enjoying baking for you with all of our preserved fruit and squash from @wakelyns agroforestry.

I made lots of our porridge topper earlier in the year with prunes, plums, panella! With this diversity of deep flavours, it’s wonder-rich, almost date-like-tasting! So, we’ve put it in this, which is a bit like a good old date an oat slice… maybe a bit more magical! We’ve also added naked barley flour and kibbled barley from our friend @edwarddickin’s family farm, Oak Farm, in Lincolnshire. Naked barley is a grain we can all be eating more of, bringing us and our biosphere more diversity. It is really well suited to our climate and sustained us long before modern wheat. It’s nutritious, malty and lovely! Its soft sweetness, and little kibble-crunch, with the unctuous filling, makes these squares mmmmm! We hope you think so too!Thank you Jeremy and Ed for the beautiful barley!

We will be baking for two more weeks then closing for from Christmas Eve until January 21st 2024 so do make sure to place your orders to avoid disappointment. Due to the time the agroforestry loaves and prune squares take to make and quantities of our preserves, there are limited quantities baked each week also. We will carry on baking them until our preserves run out!

They really capture how we work, eat, create - harvesting, processing, preserving, celebrating in summer months, then working even more frugally-creatively, over the winter with our preserves. What we have, what the Earth gives us, always guides us, not the other way round. As Patience Gray alludes to in ‘Honey From a Weed, Fasting and Feasting in Tuscany, Catalonia, the Cyclades and Apulia,’

‘Good cooking in the result of a balance struck between frugality and liberality… it is born out in communities where the supply of food is conditioned by the seasons. Once we lose touch with the spendthrift aspect of nature’s provision epitomised in the raising of a crop, we are in danger of losing touch with life itself.’

It is a joy and such a pleasure, a gift, to bake with the YQ, other diverse cereal seeds and all the ingredients grown @wakelyns, but having a network, friendships, connections to farmers and secondary producers beyond the farm gate too, means everything to us. It is being part of something bigger than ourselves, which at the same time, brings a sense of belonging which allows us to flourish as our true selves. It is the I and the WE together. It is the more connected seed and food system we hope for. It is whole. ♥️

Thanking everyone who came to @wakelyns Apple Day SO MUCH! Thank you! We loved cooking for you with the apple diversity here, and celebrating it with you.

Thank you, APPLES! Without your beautiful diversity we would not have this day of all coming together to celebrate you; without you all, we would lose so much knowledge; history; culture; traditions; rituals; recipes; connections to people and places; beauty; colours; flavours; textures; scents; pleasure; awe; magic.

And thank you, beautiful PEARS too, we are not forgetting you! :) From left to right, Comice, Beth, Robin, Beurre Hardy and Concorde in tree lines 41 - 42 by @realveg_csa’s alleys @wakelyns. We celebrate that, like the apples, plums, quince, and all the fruit, food and YQ seeds at Wakelyns, each one is different to the next, and acknowledge and embrace that we too, humans, as part of Nature, are like this and it’s JOY, it’s LIFE!

Do listen to episode 85 of @farmerama_radio. They dive deep into the world of potatoes with artist @imandatoo and it’s beautiful. They talk about how a ‘narrow genetic bottleneck of potatoes … applies to our knowledge making systems as well - if we have narrow genetic bottleneck in knowledge that means less diversity in voices and stories and histories.’ And much more! It made me think even more deeply about the incredibly frightening effects that a lack of diversity in our seeds, which become our food which become us, can have on our whole beings, our culture, behaviour… world. Good morning! I’m so happy, heart-full, humbled

Good morning! I’m so happy, heart-full, humbled and proud to be championing #agrobiodiversity with the @landworkersalliance!

With a bakery and kitchen @wakelyns, the UK’s most diverse agroforestry farm and birthplace of the YQ population wheat, and strong relationships with agroecological farms around the UK for other ingredients, agrobiodiversity is the backbone of our business, our work and our lives. The more we all bake and cook with and EAT it, the more we can help our farmers to grow it, and all create this change together. Whilst simultaneously bringing seed and food sovereignty, community, belonging, health and wellbeing, and a lot of meaning, joy and fun to our lives!

Since the nineteenth century, and so in a very short period of time, modern industrial farming has come to focus on just a few varieties of specialised high-yielding crops and animals. But this specialisation has come with huge risk.

Now, in the face of global warming, biodiversity loss and threats to our food sovereignty, what we need is more DIVERSITY.

The more diversity we have in our farming and food systems, the better they’ll be able to adapt to change, and the more resilient they’ll become to things like extreme weather events, pests and disease. At the same time, diversity in our soils, seeds and foods translates to diversity in our guts, which brings us, humans, resilience too.

It’s time to revive agrobiodiversity on our farms, in our fields, in our gardens and on our plates. The survival of our food system depends upon it.
